Yet malaria didn’t disappear in Sardinia until the end of World War II, having arrived there during the Carthaginian conquest in 215 BC. Fish didn’t make up a significant portion of the Sardinian diet because the shoreline was afflicted by malaria, and the population moved north to avoid it. But today, it’s quite common.

The main cuisine of the Sardinian islands is this hearty mutton stew cooked with potatoes, wild herbs, and a rich broth. The term “sheep in a coat” alludes to a pastoral custom of keeping the oldest sheep in the herd unshorn during the annual sheep-shearing feast.
